I have been reading up on line about scorzonera -and it seems that it is best grown in a tub (good job really) -as the roots are quite thin and have a tendancy to snap easily-this way you can tip the whole tub out and rummage ;-)
It seems you can pretty much eat the whole thing:-
- smaller leaves in salads
- larger leaves steamed
- flowers in salads
- and then the roots steamed/sauted etc
So if it grows well this may be a good plant for those with limited space as you get quite a lot of return on the space used
